One skillet Ravioli Lasagna
I took a couple of recipes and mixed and matched them so I could use Grandpa’s Mix to replace the Italian sausage the recipes called for. Wow! I was so pleased with the results. It was easy to make and delicious! Dinner win! Yay, me! -Stephanie
INGREDIENTS
One Batch Bag of Grandpa’s Meatball Mix (¾ cup)
2 tablespoons olive oil (if using turkey 1 more T)
1 lb. ground beef or turkey
1 jar of marinara sauce of your choice-we love Buon Giorno Italia
1 c. water
1 lb. cheese ravioli-get fresh if you want your cook time shortened
1 1/2 c. ricotta cheese
1 large egg
kosher salt
Freshly ground black pepper
1 c. shredded mozzarella
DIRECTIONS
Heat broiler. In a cast-iron or ovenproof skillet over medium-high heat add oil and cook 2 minutes, then add Grandpa’s Mix and stir to combine with oil and cook 2 more minutes or until bread crumbs are toasted. Turn down to medium, add ground meat (if using turkey add 1 T more of olive oil) and cook until browned, breaking it apart with your spatula into crumbles. Add marinara and water to pan and bring to a simmer. Add ravioli, cover and let simmer until ravioli is tender and sauce slightly thickens, 10 minutes. Take off lid to release moisture last 3 minutes of cooking.
Meanwhile, in a medium bowl, stir together ricotta and egg and season with salt and pepper. Drop spoonfuls of ricotta mixture all over the ravioli and let cook uncovered, 3 minutes.
Sprinkle mozzarella all over, then transfer skillet to oven and broil until cheese is golden, 3 minutes. Let cool, 10 minutes, then serve.
